My Interview with Miss Vegan

I recently had the opportunity to visit a Farmer’s Market in Scituate, Rhode Island. The reason for my two hour jaunt was to interview a woman known as “Miss Vegan (Miss Vegan). Meghan, is a vegan baker. She hopes to eventually own a vegan bakery storefront. Her most recent goal is to raise funds so that she can purchase a food truck. She tells me it would be the first and only vegan food truck in the area!

When I arrived at the farmer’s market, I noticed the tables of fresh produce from local farm. Miss Vegan’s was able to secure a tented table fairly close to the entrance. She mentions that she has been selling her baked goods at outdoor farmer’s market all summer. When the weather cools, she has her eyes set on an indoor marketplace, not too far away.

It was quite difficult to decide what to purchase among all of these tasty treats! I decided to get a lemon bar, strawberry cupcake, chocolate cream cupcake, peanut butter and jelly bar, a chocolate chip cookie sandwich filled with chocolate filling, and a s’more cookie. Slices of chocolate cake with chocolate frosting were given away as free samples that day. I enjoyed the sweet treat.

I asked her a series of questions regarding her vegan business. Meghan told me that she studies entrepreneurship online, researches the business forms that are required, and looks for ways to raise funds.

She even researched and located a nearby test kitchen where she prepares and bakes her vegan treats. In addition to selling her products at local markets, she also offers the sweets through an online shop. After she prepares the desserts, she ships them to the company which runs the online store. Her cupcake-making kit is a popular item for sale.

Her goal to own a vegan food truck is well-planned. Meghan not only wants to sell her baked goods, but also to offer meals. She has a few favorite items such as a faux, vegan chicken dish. In the meantime, she is in talks with a local supermarket to purchase her baked goods.

As the vegan population is growing rapidly across the globe, it will most-likely become more common to find such delightful treasures as vegan food trucks.

If you are ever in Rhode Island, please drop by the farmer’s market to try some of Miss Vegan’s sweets or look for her future food truck somewhere in the vicinity!

Before heading home, I had the whole afternoon and evening free, so I decided to take full advantage of a beautiful day during the last summer weekend of the season! I drove 45 minutes further to the town of Naragansett. It was brunchtime when I arrived. My stop was the Crazy Burger(Crazy Burger restaurant. The vegan offerings on their menu was quite impressive!
I ordered a vegan breakfast sandwich. It was made with baked tofu, avocado, and soy cheese on a bun. It arrived with an order of vegan faux sausage and potato mash. Everything was delicious! For my beverage, a refreshing pear and ginger juice completed my meal.

After eating my afternoon meal, I headed over to Naragansett State Beach. This white sand beach was surrounded by beach homes, rocky shores, birds, and vast ocean views dotted by sailboats. It was a perfect summer afternoon!

After unwinding on the beach for a few hours, I decided to go for a stroll along the walkway. The visitor’s center was a castle-like edifice and very striking! As I wandered along the ocean’s shores, I was met with seagulls, sailboats, and captivating vistas.

Before my drive back home, I made one final stop at Crazy Burger’s for a dessert. I opted for the vegan ice cream and bananas, sandwiched between several chocolate chip cookies and drizzled with a strawberry sauce.

I enjoyed my visit to Rhode Island’s coast!
