Maria’s Advice – Vegan Road Trips

The weather is getting warmer, even here in the northeast USA. Summer is near! That means more road trips. You may be taking a cross country trip to the Grand Canyon or renting a car to drive around Italy. In either case, your hunger will eventually reveal itself during your lengthy auto ride. Obviously, you can not bring any packaged soups or oatmeal on the road, as there will not typically be access to hot water or microwave ovens. However, there are quite a few vegan food items that travelers can take along in the car.

The following suggestions are great meals and snacks for your long, auto journeys:
1. tofurky slices, vegan, American cheese sandwiches in a wheat bun or sourdough bread
2. avocado slices with vegan, cheddar cheese in a pita wrap
3. falafel in a pita wrap
4. cold, bean salads
5. peanut or almond butter in whole wheat bread
6. hummus, tabbouleh, or baba ghanoush with pita bread
7. vegan “beef” jerky
8. fruit salad or whole fruits
9. vegan cookie, brownies, cupcakes
10. veggie chips, tings, soy crisps, crackers
11. vegetable salads
12. mixed nuts
13. trailmix or trail bars
14. date nut, walnut, fruit, or chocolate chip bars
15. veggie sushi. Needs to be eaten in the first few hours after purchase.
16. couscous with veggies
17. quinoa with veggies
